Winemaking
Crafted from a meticulous selection of estate-grown grapes at Herdade dos Toucinhos. Hand-harvested into 22 kg crates to ensure optimal grape integrity, the fruit undergoes meticulous sorting on a dedicated sorting table immediately upon arrival at the winery.
After gentle de-stemming and crushing, the grapes are transferred to stainless-steel vats, where they undergo a cold pre-fermentation maceration to enhance aroma and flavour extraction. Fermentation is conducted under strict temperature control at 28oC, over seven days, ensuring a well-structured and harmonious flavour profile.
Before pressing, the wine remains in contact with the skins for an additional three days of post-fermentation maceration, enriching its structure and complexity.
Aging
100% in French oak barrels over 24 months.
Tasting Notes
Deep and bright garnet color. The nose reveals complex aromas, with well-integrated notes of ripe red berries, complemented by warm spices and a hint of dark chocolate. On the palate, it is intense and layered, with a firm structure balanced by smooth, well-rounded tannins. The finish is long, refined, and harmoniously balanced.
Its elegance makes it an excellent pairing of more elaborate fish dishes or richly flavored meat-based meals.
Best served directly from the original bottle. Recommended serving temperature:18oC. Consume within 24 hours of opening.
